So, is it true that the darker the color, the better?

1.Mushroom has a variety of colors. The cap color of mushroom fruiting body varies greatly due to different varieties, including white, gray, gray black, yellow, peach and so on. The cap of most mushroom varieties are dark, dark gray or even black when young, and the color gradually became lighter with the improvement of maturity.

2.Mushroom varieties with different temperature types have different colors. The optimum temperature for low temperature varieties is 8 ℃ ~ 13 ℃, and the color of fruiting body is black gray or gray white; The optimum temperature for medium temperature varieties is 12 ℃ ~ 22 ℃, and the color of fruiting body is mostly light gray or gray white; The optimum temperature for mushroom production of wide temperature varieties is 15 ℃ ~ 25 ℃. The color of fruiting body changes with temperature. The temperature is high, the cap is nearly white, the temperature is low, and the cap is gray or grayish brown.

Therefore, consumers should first choose mushroom with timely harvest (the cap has not been flattened and the edge is slightly curled), high freshness and thick cap, and then choose dark Pleurotus ostreatus. Gray black Pleurotus ostreatus will also turn gray white in high temperature season, so don't blindly choose dark mushroom products in high temperature season.
